Recipe of Strawberries & Cream Cake
Ingredients:
Cake Batter
- Almond Flour: 3 cups
- Erythritol confectioner style: 3/4 cup
- Baking powder: 2 1/2 tsp
- Salt: 1/4 tsp
- Box of sugar-free strawberry jello gelatin: 1 0.3oz
- Butter: 8 tbsp (unsalted room temperature)
- Eggs: 4 (large, room temperature, separated)
- Heavy whipping cream: 3/4 cup (room temperature)
- Full fat plain greek yogurt: 1/2 cup (room temperature)
- Natural vanilla extract: 2 tsp
- Freeze-dried strawberries: 1/3 cup (crushed)
Strawberries and Cream Frosting
- Heavy whipping cream: 3 cups (cold)
- Erythritol: 4 tbsp
- Natural vanilla extract: 2 tsp
- Freeze-dried strawberries: 1/3 cup (crushed)
How to prepare:
- Preheat the oven to 350F. Butter two, 9 inch round cake pans.
- Take a small bowl and whip the egg whites until soft peaks form. Set aside.
- Take a medium bowl and whisk together the almond flour, salt, erythritol, packet of jello powder, baking powder, and the freeze-dried strawberries.
- Beat the butter in a big bowl until it becomes fluffy. Add the two egg yolks one at a time, yogurt, vanilla extract, and whipping cream. Beat them together until incorporated.
- Mix all the dry ingredients into the wet ingredients and beat until well mixed. Gently fold in the egg whites until well blended.
- Use a spoon to combine evenly amongst the two cake pans.
- Bake for 22-25 mins.
- Let the cake cool in the pans for 10 mins, then place onto a cooling rack and let cool properly.
- While the cakes are getting cool, prepare the frosting by pouring the cold whipping cream into a big bowl, add the vanilla extract and erythritol. Whip until it becomes firm and resembles whipped cream. Once it has the whipped cream consistency, fold in the crushed strawberries.
- Assemble the cake by placing one cake on a platter, top with whipped cream followed by the sliced strawberries. Place the other cake on top. Cover the entire cake in whipped cream. Decorate with the fresh sliced strawberries.
