Rustic Apple Pie

Pies or tarts are some of the most delicious desserts everyone should taste at least once in their life. Made of different fresh or frozen fruits, these flaky, crispy, and juicy sweet dish is a must on every occasion.

If you have some fresh apples at home but can’t make anyone eat them, make a delicious apple pie for them. 

Today we will show how two ways of making rustic apple pie. Both of them are yummy and quite easy to make.

1. Rustic Apple Pie

Ingredients:

  • 2 Flaky Pie Crusts
  • 2 lb. Jonagold, Ida Red, or Golden Delicious apples
  • 1 lb. Granny Smith Apples
  • 1 tbsp. all-purpose flour
  • 1 tsp. orange zest
  • 1/4 tsp. Ground cinnamon
  • tsp. freshly grated or ground nutmeg
  • 3 tbsp. sugar
  • One large egg

How to prepare:

  • Heat oven to 375 degrees F. Work on a piece of parchment paper, place it on a disk of dough on top of the other, and roll the dough together into a 15-inch Circle. Slide the paper with crust onto the baking sheet.
  • Take a large bowl and toss the apples, flour, zest, cinnamon, nutmeg, and two tablespoons sugar. Pile all the apples on top of the crust, leaving a 3-inch border. Fold the edge over the apples.
  • Brush the crust with egg. Sprinkle the entire pie with remaining tablespoon sugar. Bake for 55-65 minutes or until the crust becomes golden brown and the apples become tender. Wait for at least 30 minutes before serving. Serve warm or at room temperature.

2. Rustic Apple Sweet Potato Pie

Ingredients:

Pastry Dough

  • ¾ cup all-purpose flour
  • ½ cup whole wheat flour
  • ¼ tsp salt
  • Two tablespoons butter
  • Two tablespoons canola oil
  • 3 to 4 tablespoons cold water

Tart

  • One medium green-skin apple, cored and thinly sliced (1 cup)
  • One apple, cored and thinly sliced (1 cup)
  • 1 cup sliced and peeled sweet potato (see Tip)
  • Two teaspoons lemon juice
  • Three tablespoons sugar or sugar substitute (see Tip) equivalent to 3 tablespoons sugar
  • Two teaspoons all-purpose flour
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground coriander
  • Two teaspoons honey
  • Two teaspoons water

Rustic Apple Sweet Potato Pie

How to prepare:

  • Prepare the pastry dough: Stir together whole-wheat flour, all-purpose flour, and salt in a medium bowl. Use a pastry blender and cut in butter until the mixture resembles coarse crumbs. Stir in canola oil. Sprinkle one tablespoon cold water over part of the flour mixture; toss gently with a fork. Push the moistened dough to side of the bowl. Repeat with additional cold water, one tablespoon at a time until all of the flour mixtures are moistened. Shape into a ball. Set aside.
  • Prepare tart: Preheat the oven to 375 degrees F. Line a large baking sheet with foil; sprinkle foil lightly with the flour. Place reserved dough on foil. Flatten slightly. Roll the dough from center to the edge into a 12-inch circle. Set aside.
  • Combine different apple slices and sweet potato slices in a large bowl. Add some lemon juice; toss gently to coat. Combine sugar, two teaspoons flour, coriander, and cinnamon in a small bowl. Add it to apple mixture; toss gently to coat.
  • Mound the apple mixture in the center of a pastry, leaving a 2-inch border around the edge. Fold the pastry up and over filling, pleating dough as necessary. Cover the apple mixture only with a double thickness of foil (do not cover dough).
  • Bake for 40 minutes. Remove the foil. Bake again until the apples and sweet potato are tender. Combine honey and the water in a small bowl; brush over apple mixture. Serve warm.
